A perfect side dish to your peanut butter and jelly sandwich, this celery and apple Salad topped with peanuts is the perfect combination of salty and sweet.
t tbsp lemon juice
½ tsp Dijon mustard seeds
¼ cup olive oil
2 red apples, cut into julienne
2 green apples, sliced thin
4 stalks celery, sliced thin
¼ cup chopped parsley
¾ cup U.S. peanuts, coarsely chopped
In a bowl, mix the lemon juice with the mustard, add oil in a thin stream, beating to emulsify, add peanuts and toss well.
