Peanut Butter for the Hungry

Shrimp and Peanut SaladServes: Makes 4 servings

This is a salad that eats like a meal! You’ll love the combination of peanuts and seafood with a splash of Asian flavours.


2 cloves garlic, minced
¼ cup peanut oil
3 tomatoes, in wedges
⅓ cup chopped shallot
1 chopped green chili
¼ cup fish sauce (sold in Asian supermarkets)
¼ cup lemon juice
2 slices ginger
2 cups water
500 g peeled shrimp
½ cup salted and roasted U.S. peanuts, chopped


Stir-fry garlic in a thick skillet with oil, moving constantly to brown evenly. When it turns a nice golden color remove from heat, discard half the garlic and pour the other half and the oil in a bowl, allow to cool and add tomatoes, shallot, chili, fish sauce and lemon juice.

On the other hand, heat water in a saucepan, add sliced ginger and when the water boils add the shrimp, bring again to a boil and remove from heat. Drain shrimp and rinse with cold water. Add the shrimp to the bowl of tomatoes and add peanuts, stir well and serve immediately.
