Peanut Butter for the Hungry

2 baguettes, preferably a couple of days old
2 cups water
1 piloncillo (molasses) cone
1 cinnamon stick
1 cup US peanuts, shelled
½ cup shredded coconut
1 cup raisins
1 cup canned pineapple in syrup, diced
1 cup pineapple syrup


Cut bread into slices and place on a baking sheet, bake at 180°C until evenly brown, turn over if necessary.

In a pot, heat water with piloncillo and cinnamon, when it boils add the syrup and reduce heat, let simmer until piloncillo completely dissolves.

Place bread on baking dish, arrange raisins, coconut, peanuts and pineapple on top, pour piloncillo syrup, and bake for 15 minutes at 180°C. Remove from oven and serve.
