Peanut Butter for the Hungry

Peanut Polvorones Mexican CookiesPreparation time: 30 minutes plus cooling and baking.

Makes: 4 servings


1 cup confectioners’ sugar
¾ cup USA Peanuts, ground
¾ cup vegetable butter
1¼ cup flour


Mix all ingredients until you get a dough you can knead with your hands; make a cylinder with the dough and wrap it with waxed paper, cool until firm.

Remove the paper and cut in slices; arrange in an oven tray and bake for about 10 minutes at 180°C or until they are slightly brown on the edges.

Allow to cool and sprinkle with confectioners’ sugar.
